{"id":1030,"date":"2023-01-29T19:22:25","date_gmt":"2023-01-29T19:22:25","guid":{"rendered":"https:\/\/healthchicchatter.com\/?page_id=1030"},"modified":"2023-01-30T17:10:01","modified_gmt":"2023-01-30T17:10:01","slug":"healthy-chickpea-chocolate-chip-cookies","status":"publish","type":"page","link":"https:\/\/HealthChicChatter.com\/?page_id=1030","title":{"rendered":"Healthy Chickpea Chocolate Chip Mini Muffins"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\"><strong><u>Ingredients:<\/u><\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 can chickpeas (drained &amp; rinsed)<\/li>\n\n\n\n<li>\u00bd cup nut butter choice &nbsp;<\/li>\n\n\n\n<li>1\/3 cup maple syrup (or sugar substitute like Sukrin syrup, Sukrin Gold or Xylitol if seeking less sugar)<\/li>\n\n\n\n<li>\u00bc cup semi sweet (or dark or vegan) mini chocolate chips<\/li>\n\n\n\n<li>2 tsp vanilla extract<\/li>\n\n\n\n<li>\u00bd tsp baking powder<\/li>\n\n\n\n<li>\u00bd tsp baking soda<\/li>\n\n\n\n<li>Sprinkle of kosher sea salt<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Combine all the wet ingredients in a blender (or food processor or hand mixer) first and blend well. I find it easier to work with a hand mixer vs the blender. if the mix gets too thick, you can always add a little apple sauce. Then add the baking powder &amp; soda and blend a bit more. Fold in the chocolate chips, if adding, and gently mix.
