{"id":1088,"date":"2023-02-20T19:21:11","date_gmt":"2023-02-20T19:21:11","guid":{"rendered":"https:\/\/HealthChicChatter.com\/?page_id=1088"},"modified":"2023-04-27T21:10:51","modified_gmt":"2023-04-27T21:10:51","slug":"keto-strawberry-cake","status":"publish","type":"page","link":"https:\/\/HealthChicChatter.com\/?page_id=1088","title":{"rendered":"Could Be Keto Strawberry Cake"},"content":{"rendered":"\r\n<p class=\"wp-block-paragraph\"><strong><u>Ingredients (cake part):<\/u><\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>1.5 cups almond flour \u00a0(or potato starch)<\/li>\r\n\r\n\r\n\r\n<li>3 tbsp coconut flour<\/li>\r\n\r\n\r\n\r\n<li>2 tbsp flax meal<\/li>\r\n\r\n\r\n\r\n<li>1 tsp baking powder<\/li>\r\n\r\n\r\n\r\n<li>\u00bd tsp baking soda<\/li>\r\n\r\n\r\n\r\n<li>\u00bc tsp salt<\/li>\r\n\r\n\r\n\r\n<li>\u00bd cup monk fruit or other baking sweetener alternative of choice<\/li>\r\n\r\n\r\n\r\n<li>4 eggs (or egg substitute like apple sauce)<\/li>\r\n\r\n\r\n\r\n<li>1\/3 cup unsweetened milk of choice<\/li>\r\n\r\n\r\n\r\n<li>1 tsp vanilla extract<\/li>\r\n\r\n\r\n\r\n<li>\u00bd cup sour cream or plain Greek yogurt<\/li>\r\n\r\n\r\n\r\n<li>1 cup organic strawberries (washed, dried well &amp; sliced small &#8211; I often use dried strawberries)<\/li>\r\n\r\n\r\n\r\n<li>Optional: 1-2 scoops strawberry protein powder (I like to use Perfect Keto&#8217;s Strawberry Collagen protein powder)<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\"><strong><u>Ingredients (optional topping):<\/u><\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>1 cup heavy whipping cream<\/li>\r\n\r\n\r\n\r\n<li>\u00bc cup powdered monk fruit (sweetener)<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">Preheat oven to 350 and coat a small pan with nonstick spray or use parchment paper. \u00a0Combine dry ingredients and mix well. In a larger bowl, eggs, milk, vanilla, Greek yogurt &amp; monk fruit (or sweetener). Mix well for 1-2 minutes. Slowly add dry ingredients to the wet ingredients. Fold in strawberries last. Bake for 22-30 minutes testing with a toothpick or fork. Let stand 10 minutes to cool before adding a dollop of whipped cream.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">&nbsp;<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\"><strong>Keto friends:<\/strong> Use almond flour for the bulk of the flour used and a sugar substitute. Other friends may use all coconut flour if you prefer that taste. My super clean friends may opt for maple syrup instead of a sugar substitute. It all depends on your goals and what works for your health. I typically use a blend of potato starch and coconut flour since I learned that almonds weren&#8217;t the best for me (personally).
