{"id":1124,"date":"2023-02-28T17:41:33","date_gmt":"2023-02-28T17:41:33","guid":{"rendered":"https:\/\/HealthChicChatter.com\/?page_id=1124"},"modified":"2023-11-25T20:38:16","modified_gmt":"2023-11-25T20:38:16","slug":"cauliflower-nachos","status":"publish","type":"page","link":"https:\/\/HealthChicChatter.com\/?page_id=1124","title":{"rendered":"Cauliflower Nachos"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><br \/>\n\u2022 1 cauliflower head<br \/>\n\u2022 3 tbs olive oil<br \/>\n\u2022 1 tbs taco seasoning<br \/>\n\u2022 salt to taste<br \/>\n\u2022 15 oz can black beans (rinsed &amp; drained)<br \/>\n\u2022 1 jalape\u00f1o, sliced<br \/>\n\u2022 1\/2 cup shredded cheddar cheese<br \/>\n\u2022 1 tomato, diced<br \/>\n\u2022 1 avocado, diced<br \/>\n\u2022 1 scallion, chopped<br \/>\n\u2022 fresh cilantro, chopped<br \/>\n\u2022 Optional: 1\/4 cup pickled red onions<\/p>\n<p><strong>Optional Sauce:<\/strong><br \/>\n\u2022 \u00bd cup kewpie mayo (or Greek yogurt)<br \/>\n\u2022 1 tbs honey<br \/>\n\u2022 Sriracha to taste<\/p>\n<p><a href=\"https:\/\/healthchicchatter.com\/wp-content\/uploads\/2023\/04\/califlower-nachos-scaled.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright wp-image-1226\" src=\"https:\/\/healthchicchatter.com\/wp-content\/uploads\/2023\/04\/califlower-nachos-225x300.jpg\" alt=\"\" width=\"120\" height=\"160\" \/><\/a><\/p>\n<p>Preheat your oven to 420\u00b0 F &amp; line a baking sheet with parchment paper. Chop your cauliflower in florets and toss them with the taco seasoning, salt to taste &amp; olive oil. Spread them out evenly on your baking sheet and roast for 25 minutes (or cook in air fryer to crisp).<\/p>\n<p>Remove the cauliflower from the oven and push them together. Top with the beans, cheese, and jalape\u00f1o slices. Pop back in the oven until the cheese is melted.
