{"id":1187,"date":"2023-03-20T13:40:06","date_gmt":"2023-03-20T13:40:06","guid":{"rendered":"https:\/\/HealthChicChatter.com\/?page_id=1187"},"modified":"2023-03-20T13:40:06","modified_gmt":"2023-03-20T13:40:06","slug":"crunchy-cabbage-n-cashew-quinoa-salad","status":"publish","type":"page","link":"https:\/\/HealthChicChatter.com\/?page_id=1187","title":{"rendered":"Crunchy Cabbage &#8216;n Cashew Quinoa Salad"},"content":{"rendered":"<p><strong><u>Salad Ingredients: \u00a0<\/u><\/strong><\/p>\n<ul>\n<li>1\/2 cup uncooked quinoa<\/li>\n<li>1 cup water or bone broth<\/li>\n<li>4 cups shredded dino kale, stems removed<\/li>\n<li>5 cups edamame<\/li>\n<li>5 cups shredded cabbage<\/li>\n<li>5 cups shredded purple cabbage<\/li>\n<li>1 cup roasted cashews, roughly chopped (or other nut substitute)<\/li>\n<li>\u00bd cup green onion, thinly sliced<\/li>\n<li>\u00bd cup cilantro, chopped<\/li>\n<li>\u00bd cup diced cucumber<\/li>\n<li>1 tbsp olive oil<\/li>\n<\/ul>\n<p><strong><u>Dressing Ingredients: \u00a0<\/u><\/strong><\/p>\n<ul>\n<li>\u00bd cup olive oil<\/li>\n<li>\u00bc cup unseasoned rice vinegar<\/li>\n<li>\u00bc cup tamari<\/li>\n<li>\u00bc cup creamy almond or other organic nut butter<\/li>\n<li>5 tbsp honey<\/li>\n<li>5 tbsp fresh lime juice<\/li>\n<li>2 tbsp grated (or finely minced) fresh ginger<\/li>\n<li>Sprinkle of pepper<\/li>\n<\/ul>\n<p>Add quinoa to water in a small pot and bring to a boil. Reduce to a simmer, cover, and cook for 12-15 minutes until water is absorbed.<\/p>\n<p>Add kale to a large salad or mixing bowl and add olive oil.
