{"id":1294,"date":"2023-06-12T13:21:00","date_gmt":"2023-06-12T13:21:00","guid":{"rendered":"https:\/\/HealthChicChatter.com\/?page_id=1294"},"modified":"2023-06-12T13:21:00","modified_gmt":"2023-06-12T13:21:00","slug":"healthy-taco-salad","status":"publish","type":"page","link":"https:\/\/HealthChicChatter.com\/?page_id=1294","title":{"rendered":"Healthy Taco Salad"},"content":{"rendered":"<p><strong><u>Ingredients:<\/u><\/strong><\/p>\n<ul>\n<li>8-16 oz of clean, hormone-free lean ground beef<\/li>\n<li>1 ear of corn or 6-8 oz of canned non-GMO corn<\/li>\n<li>1 red pepper, chopped<\/li>\n<li>1 head of Romaine lettuce<\/li>\n<li>\u00bd to 1 bunch of kale (or get a mix of sweet greens kale)<\/li>\n<li>1 jalapeno<\/li>\n<li>1\/8 c chopped cilantro<\/li>\n<li>Cherry tomatoes<\/li>\n<li>1 avocado, chopped into cubes<\/li>\n<\/ul>\n<p>Cook the hamburger meat with low-sodium taco seasoning.<\/p>\n<p>Cook your corn \u2013 I like to shuck my corn, wrap it in a damp paper towel and microwave it for 1 minute-ish. Cut the corn off the cob, then sear it on high to \u2018char\u201d it with no oil but a little of the taco seasoning (or another seasoning of your choice).<\/p>\n<p>Sear your chopped red pepper with a little water and seasoning, then set aside.<\/p>\n<p>Clean and roughly chop your kale and lettuce and place in a large bowl. Toss in the red pepper, corn, sliced tomatoes or cherry tomatoes, and thinly chopped jalapeno (no seeds).
