{"id":1365,"date":"2023-07-24T13:39:06","date_gmt":"2023-07-24T13:39:06","guid":{"rendered":"https:\/\/HealthChicChatter.com\/?page_id=1365"},"modified":"2023-07-24T13:39:06","modified_gmt":"2023-07-24T13:39:06","slug":"mexican-style-chicken-meal-prep","status":"publish","type":"page","link":"https:\/\/HealthChicChatter.com\/?page_id=1365","title":{"rendered":"Mexican Style Chicken Meal Prep"},"content":{"rendered":"<p><strong><u>Ingredients<\/u><\/strong><strong>: \u00a0<\/strong><\/p>\n<ul>\n<li>Raw hormone &amp; antibiotic free chicken breast, cubed\n<ul>\n<li>4-6 oz per serving, recipe can make 4-6 meals, (500-750 gr)<\/li>\n<\/ul>\n<\/li>\n<li>1 medium onion, chopped<\/li>\n<li>1 medium bell pepper, chopped<\/li>\n<li>1 whole lime juiced<\/li>\n<li>1 can organic black beans, rinsed<\/li>\n<li>1 cup washed, uncooked basmati rice<\/li>\n<li>2 tsp oregano<\/li>\n<li>1 tsp garlic powder<\/li>\n<li>1 tsp paprika<\/li>\n<li>1 tsp cumin<\/li>\n<li>1 tsp chili powder<\/li>\n<li>1 tsp salt &amp; pepper<\/li>\n<li>2 tbsp olive oil for cooking<\/li>\n<li>1 tsp of each seasoning previously used above<\/li>\n<li>1 \u00bc cup water or broth<\/li>\n<li>Garnish with chopped coriander or cilantro<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>Slice chicken into cubes, add oregano, cumin,\u00a0 paprika, and garlic powder, chili powder &amp; mix well, plus squeeze lime juice, cook on medium heat (about 6-8 min) until golden brown, then set aside.<\/p>\n<p>&nbsp;<\/p>\n<p>Add onions and bell peppers to a pan and cook for 2 minutes. Then add back beans, washed rice and more seasonings. Let toast &amp; add chopped tomatoes &amp; water and let it bubble, then lower heat and let it simmer (abut 12-15 minutes). Stir halfway to prevent sticking.<\/p>\n<p>Mix in chicken with coriander &amp; separate into daily servings.
