Simply combine the top 4 ingredients until well mixed and light and fluffy. Use an ice cream or cookie scoop to scoop out small balls to place on a tray or freezer safe container and freeze about 15-20 minutes. Melt the chocolate and coconut mixture the last minute before taking the balls out of the freezer. You don&#8217;t have to coat them completely, but rather drizzle the melted chocolate across the top as heavy or light as you&#8217;d like. then top them lightly with the flaky sea salt.
