{"id":1732,"date":"2024-03-26T22:51:29","date_gmt":"2024-03-26T22:51:29","guid":{"rendered":"https:\/\/HealthChicChatter.com\/?page_id=1732"},"modified":"2024-03-26T22:51:29","modified_gmt":"2024-03-26T22:51:29","slug":"potato-pie","status":"publish","type":"page","link":"https:\/\/HealthChicChatter.com\/?page_id=1732","title":{"rendered":"Potato Pie"},"content":{"rendered":"<p><strong><u>Ingredients:<\/u><\/strong><\/p>\n<ul>\n<li>4-5 small-ish potatoes<\/li>\n<li>1 cup mozzarella<\/li>\n<li>3 eggs<\/li>\n<li>2 tbsp cream cheese<\/li>\n<li>8-10 cheery tomatoes<\/li>\n<li>Red onion<\/li>\n<li>Spinach<\/li>\n<li>3-4 tbsp butter or ghee<\/li>\n<li>1\/5 cup of milk of choice<\/li>\n<li>\u00bd tsp garlic powder<\/li>\n<li>Salt &amp; pepper to taste<\/li>\n<li>Olive oil<\/li>\n<\/ul>\n<p>Brush potatoes with oil and bake for 40 minutes at 400. Once cooked and cooled slightly, crush the potatoes into a pie dish mashing them evenly around. Sprinkle with salt and pepper and drizzle a bit of olive oil. Put the dish into the oven and bake for another 30 minutes.<\/p>\n<p>Remove from the oven and place the cheese, cherry tomatoes, onion, and spinach in the center of the dish.<\/p>\n<p>In a separate bowl, mix the eggs, softened cream cheese, butter, spices and milk. Pour this mixture over the pie and bake for another 30 minutes.<\/p>\n<p>Before serving, sprinkle a little Parmesan on top.<\/p>\n<p>Now, if you&#8217;d like to make this a little higher in protein, add some cooked bacon bits, shredded chicken, sliced spicy chicken sausage or other protein.
