{"id":1893,"date":"2024-08-04T19:13:47","date_gmt":"2024-08-04T19:13:47","guid":{"rendered":"https:\/\/HealthChicChatter.com\/?page_id=1893"},"modified":"2024-08-07T20:36:57","modified_gmt":"2024-08-07T20:36:57","slug":"mediterranean-pan-dish","status":"publish","type":"page","link":"https:\/\/HealthChicChatter.com\/?page_id=1893","title":{"rendered":"One Pan Mediterranean Dish"},"content":{"rendered":"<p>Ingredients:<\/p>\n<ul>\n<li>1 cup of rice (I&#8217;ve made this a variety of ways&#8230;sometimes I use <a href=\"https:\/\/amzn.to\/3YxUCJw\">Basmati rice<\/a>, sometimes I use <a href=\"https:\/\/amzn.to\/3YxtZEr\">hearts of palm rice or noodles<\/a>, and sometimes I use <a href=\"https:\/\/amzn.to\/3LRTwAM\">miracle noodle &#8220;rice&#8221;<\/a>)<\/li>\n<li>2 cups chopped organic spinach<\/li>\n<li>1 cup sliced Italian olives<\/li>\n<li>1 cup sliced cherry tomatoes (bonus points if you grow your own!)<\/li>\n<li>1 can butter beans rinsed and drained<\/li>\n<li>1 cup chopped <a href=\"https:\/\/amzn.to\/4chq5Tg\">sun-dried tomatoes<\/a><\/li>\n<li>1 10 oz can\/jar artichoke hearts (I prefer mine in water since many of the marinated options use seed oils vs. olive oil)<\/li>\n<li>1\/2 cup coconut milk<\/li>\n<li>2.5 cups water<\/li>\n<li>1\/4 &#8211; 1\/2 tsp salt (the olives and dried tomatoes add salty flavor)<\/li>\n<li>1\/4 tsp pepper<\/li>\n<li>Parsley for garnish<\/li>\n<li>Vegan Feta (or clean feta) for garnish<\/li>\n<\/ul>\n<p>Set the oven on 400. Mix all the ingredients in a casserole dish and be sure the rice is covered well. Bake for approximately 40 minutes. Sprinkle with the feta and parsley and ENJOY!<\/p>\n<p>This is a lovely dish and I am a fan of a variety of flavors and textures when I eat, so this dish makes me really happy.
