{"id":261,"date":"2015-02-13T22:47:15","date_gmt":"2015-02-13T22:47:15","guid":{"rendered":"http:\/\/healthchicchatter.com\/?page_id=261"},"modified":"2015-05-01T21:06:54","modified_gmt":"2015-05-01T21:06:54","slug":"blueberry-paleo-muffins","status":"publish","type":"page","link":"https:\/\/HealthChicChatter.com\/?page_id=261","title":{"rendered":"Blueberry Paleo Muffins"},"content":{"rendered":"<p>Makes 12 muffins  (Paleo)<\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n1\/2 cup coconut flour<br \/>\n1\/2 cup almond flour<br \/>\n6 large eggs<br \/>\n1 cup frozen or fresh blueberries<br \/>\n1\/2 cup honey<br \/>\n1\/4 cup coconut oil, melted<br \/>\n2 tsp. vanilla extract<br \/>\n3\/4 tsp. sea salt<br \/>\n\u00bc tsp. coconut extract<br \/>\n2 tsp. baking powder<br \/>\n\u00bd tsp. baking soda<br \/>\nCoconut oil (for greasing pan)<\/p>\n<p><strong>Directions<\/strong><br \/>\n1.\tPreheat oven to 350\u00b0 F and grease a 12 cup muffin tin with cocnut oil.<br \/>\n2.\tIn a mixing bowl, whisk together coconut flour, almond flour, salt, baking powder and baking soda.<br \/>\n3.\tIn another bowl, mix together eggs, coconut oil, honey and vanilla.<br \/>\n4.\tAdd liquid ingredients to dry ingredients and mix with a hand mixer on medium speed for about a minute or until well combined. Stir in blueberries.<br \/>\n5.\tSpoon the batter evenly into the muffin cups.
