{"id":399,"date":"2015-05-01T22:10:09","date_gmt":"2015-05-01T22:10:09","guid":{"rendered":"http:\/\/healthchicchatter.com\/?page_id=399"},"modified":"2015-05-17T18:27:45","modified_gmt":"2015-05-17T18:27:45","slug":"spaghetti-squash-lasagna-casserole","status":"publish","type":"page","link":"https:\/\/HealthChicChatter.com\/?page_id=399","title":{"rendered":"Spaghetti Squash Lasagna Casserole"},"content":{"rendered":"<p>serves 6-8<\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n1 medium spaghetti squash (about 4 cups cooked)<br \/>\n1.5 cups ricotta cheese (I will tell you I&#8217;m not a fan of this cheese and now leave it out of the recipe which cut calories and it&#8217;s even better in my opinion!)<br \/>\n1 large egg<br \/>\n1 tsp dried oregano<br \/>\n1\/4 tsp garlic powder<br \/>\n1.5 cups marinara sauce<br \/>\n4 cups spinach (baby spinach works well)<br \/>\n1\/4 cup part-skim Mozzarella cheese<br \/>\n1\/8 fresh parmesan cheese<\/p>\n<p><strong>Garnish:<\/strong> red pepper flakes, fresh tomatoes sliced or grape tomatoes<\/p>\n<p><strong>Directions:<\/strong><br \/>\n1.Slice spaghetti squash in half, remove seeds, &#038; bake with the flesh side down for 40 minutes at 350 degrees.<br \/>\n(using leftover spaghetti squash speeds the prep!)<br \/>\n2.Run a fork through the spaghetti squash to create strands and throw away the exterior once the insides have been removed.<br \/>\n3. Combine the ricotta (if you use it) with the egg, basil, oregano, and garlic.<br \/>\n4. Begin layering by placing 1\/2 cup of marinara on the bottom of a greased 8X8 dish.<br \/>\n5. Continue layering with the strands of squash, then a bit of the ricotta mix, then a heavy layer of spinach.<br \/>\n6. Follow with a think layer of Mozzarella cheese.<br \/>\n7. Repeat steps 4-6 as many times as you have ingredients.<br \/>\n8. For the top, add in more parmesan, a light sprinkle of almond meal and or seasoned bread crumbs.<br \/>\n9. Bake uncovered for 30 minutes (until bubbling).<\/p>\n<p>Allow it to sit for at least 10 minutes before slicing.
