{"id":480,"date":"2015-08-13T19:58:10","date_gmt":"2015-08-13T19:58:10","guid":{"rendered":"http:\/\/healthchicchatter.com\/?page_id=480"},"modified":"2015-08-15T18:02:05","modified_gmt":"2015-08-15T18:02:05","slug":"cauliflower-mini-pizzas","status":"publish","type":"page","link":"https:\/\/HealthChicChatter.com\/?page_id=480","title":{"rendered":"Cauliflower Mini Pizzas"},"content":{"rendered":"<p>These \u201cpizzas\u2019 are made into easy single-serving portions and are so much healthier than the regular route!<\/p>\n<p><strong><u>Ingredients<\/u><\/strong>:<a href=\"http:\/\/healthchicchatter.com\/wp-content\/uploads\/2015\/08\/image.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-481\" src=\"http:\/\/healthchicchatter.com\/wp-content\/uploads\/2015\/08\/image-300x300.jpg\" alt=\"image\" width=\"300\" height=\"300\" srcset=\"https:\/\/healthchicchatter.com\/wp-content\/uploads\/2015\/08\/image-300x300.jpg 300w, https:\/\/healthchicchatter.com\/wp-content\/uploads\/2015\/08\/image-150x150.jpg 150w, https:\/\/healthchicchatter.com\/wp-content\/uploads\/2015\/08\/image-1024x1024.jpg 1024w, https:\/\/healthchicchatter.com\/wp-content\/uploads\/2015\/08\/image.jpg 1936w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><strong>Topping<\/strong><\/p>\n<ul>\n<li>1\/3 cup marinara sauce<\/li>\n<li>\u00bd cup shredded mozzarella cheese (I\u2019ve used a blend of Pepper Jack and Cheddar when in a pinch)<\/li>\n<li>\u00bc cup pepperoni mini\u2019s (I\u2019ve also used prosciutto, turkey bacon, or venison sausage)<\/li>\n<li>Alternate to marinara is olive oil, garlic, and\/or pesto.<\/li>\n<\/ul>\n<p><b>Cauliflower Crust\u00a0<\/b><\/p>\n<ul>\n<li>1 cauliflower chopped<\/li>\n<li>1 large egg<\/li>\n<li>1\/3 cup shredded mozzarella<\/li>\n<li>2 tbsp freshly grated Parmesan<\/li>\n<li>1 tsp dried basil<\/li>\n<li>\u00bd tsp dried oregano<\/li>\n<li>\u00bd tsp garlic powder<\/li>\n<li>\u00bc tsp onion powder<\/li>\n<li>sea salt and freshly ground b black pepper, to taste<\/li>\n<\/ul>\n<p><u><b> Directions<\/b><\/u>:<\/p>\n<ol>\n<li>Preheat oven to 425 degrees F. Line a baking sheet with parchment paper or a silicone baking mat and set aside.<\/li>\n<li>Add cauliflower to the bowl of food processor and pulse until finely ground, yielding about 2-3 cups.<\/li>\n<li>Transfer to microwave safe bowl. Cover loosely and place into microwave for 4-5 minutes or until softened. Let cool. (Another option is to bring to a boil in a pan and once softened, pulse to break into finer bits.)<\/li>\n<li>Using a clean cheese cloth or dish towel, drain cauliflower completely, removing as much water as possible. (Otherwise, your cooking time will be doubled, almost!)<\/li>\n<li>Transfer cauliflower to larger bowl and stir in egg, mozzarella, Parmesan, basil, oregano, garlic powder and onion powder. Season with salt and pepper to taste.<\/li>\n<li>Using an ice cream scoop, spread cauliflower mix into a circle for each little pizza and place onto the prepared cookie sheet. Spray lightly with nonstick spray and bake for 10-12 minutes, or until golden. (Remember, this step may take longer depending on the amount of moisture left in the cauliflower.)<\/li>\n<li>Top each pizza round with marinara, mozzarella, and pepperoni minis (or topping of choice). Place into the oven and cook until the cheese has melted. (Anywhere from 4-12 minutes!)<\/li>\n<\/ol>\n<p>Serve immediately.
