No Bake Nut Butter Bars

Ingredients:

  • 1 cup almond flour (or oat or coconut flour, I’ve made these with all of these!)
  • 1 cup nut butter of choice (I’ve used organic almond, cashew, and peanut kinds of butter)
  • ¼ cup sweetener of choice (low carb folks, try xylitol; others maple syrup)
  • 1 cup Peanut Butter Powder (I use the non-GMO PB Fit)
  • Salt (just a pinch)

Topping:

Prep an 8”X 8” pan with parchment or coconut butter and set aside.

In a small pan on low heat, mix nut butter and syrup (sweetener) until combined and smooth (about 2 minutes). Remove from heat and add flour until well combined. It will be thick. Transfer the mix to the prepared pan and press it with a spatula or spoon until it is evenly pressed.

Wipe the sauce pan and heat your chocolate chips and butter, stirring frequently. You can do this in the microwave, as well.  Pour and spread evenly across the top of the nut butter base and add any chopped nuts or other toppings. Then, refrigerate for about 2 hours.

Allow bars to warm up for about 5 minutes once removed from the fridge before cutting. If the bars are too cold, the topping may crack.
