Butternut Squash Fries

Ingredients:

  • 1 butternut squash (washed, split in half & cut into ¼-1/3 inch thick (max) “fries” so it cooks evenly
  • 4 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 1 tsp onion powder
  • Pinch of salt
  • 1-2 cups of shredded parmesan (or pecorino cheese)

Prep and cut your squash. Mix the oil & other ingredients and then toss the squash until the pieces are all well coated. Dip both sides of the cut squash into the cheese & place the prepared pieces on a prepared baking sheet.

 

Bake for 20 minutes at 450. At 20 minutes, flip the fries & top with a little bit more cheese. Bake another 3-ish minutes.

 

There are lots of ways to serve this, however, I like to serve it with this chili lime sauce:

 

Chili Lime Sauce

  • 2 tbsp mayo (clean, please!)
  • 3 tbsp sour cream
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • ¼ tsp cayenne
  • Pinch of sea salt
  • Juice of half a lime
