Cacao Nib Walnut Cookies

Ingredients:

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup pure maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup cacao nibs
  • 1/3 cup chopped walnuts

Set your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

In a mixing bowl, combine the dry ingredients: almond flour, coconut flour, baking soda, and salt. Next, add the wet ingredients: melted coconut oil, maple syrup (or honey), and vanilla extract. Mix everything together until a dough forms.

Time for the chocolatey and nutty goodness! Fold in the cacao nibs and chopped walnuts, making sure they’re evenly distributed throughout the dough. Shape your cookies! Take small portions of dough and roll them into balls. Leave some space between each ball on the baking sheet.
