Pumpkin Mug Cake with Good Fat


  • 1 large whole egg
  • 1/3 cup organic pumpkin puree
  • 3 tbsp whole ground flaxseed
  • 1 tsp honey
  • 1 tsp coconut oil
  • ½ tsp spices (pumpkin pie spice, nutmeg, etc.)


  • Beat egg with a fork.
  • Add in pumpkin puree, honey, coconut oil, spice and flaxseed.
  • Pour into 1-2 mugs or ramekins.
  • Microwave on high for 2-ish minutes.

Add a dollop of CLEAN whipped topping and a couple walnuts and ENJOY!!
