Spinach and Artichoke Dip

Ingredients:

  • 1 – 10 oz bag of freshly chopped spinach (or defrost a small box of chopped spinach)
  • 1 – 12 or 14 oz can artichoke hearts (in water), roughly chopped
  • 1 – 8 oz block cream cheese, cut into cubes
  • 1 cup sour cream
  • 2/3 cup shredded organic mozzarella cheese  
  • 1/3-1/2 cup parmesan cheese
  • 1 tsp onion powder
  • 4 cloves minced garlic
  • Salt & pepper to taste

Combine everything in a crockpot & stir.  Cook on low for 2-3 hours, stirring a couple of times per hour while cheese melts. Remove & enjoy!
