Ingredients:
- 1 cup old fashioned oats
- ½ cup oat flour
- 1 cup organic nut butter of choice
- 2 eggs
- ¼ cup coconut sugar (or sugar substitute if tolerated)
- ¼ cup maple syrup
- 1 tsp vanilla
- ½ tsp baking soda
- pinch of sea salt
- ½ -cup mini semi-sweet chocolate chips
Preheat oven to 350. Mix nut butter, eggs sugar, syrup & vanilla. Add in the remaining ingredients and mix well. Gently fold in the chocolate chips last. Scoop dough onto parchment paper. Either roll into balls (with wet hands to avoid stickiness) or scoop &drop into mini muffin tins. The recipe should make about a dozen large cookies or 3 dozen mini bites. Cook for about 10-13 minutes. Let them cool first and enjoy!
