Rice Protein “Pudding”


  • 6 egg whites
  • ½ cup milk of choice
  • 1 cup long-grain rice of choice
  • 1 scoop vanilla protein of choice
  • ½ tsp vanilla
  • ¼ tsp cinnamon
  • 1/8 tsp nutmeg
  • 1 tbsp sweetener of choice (I prefer brown sugar Sukrin Gold but have used xylitol, stevia, or maple syrup in this recipe)


Bring milk and rice to a boil. Whisk egg whites and slowly add to rice mixture (stirring) until egg whites are fully cooked (about 5 minutes). Add protein powder and remaining ingredients.

Optional toppings can be dried cranberries, almonds, or walnuts.
