Ingredients:
- 1/3 cup creamy organic nut butter of choice
- ¼ cup honey
- 1 tsp vanilla
- 3 lightly salted rice cakes
Topping Ingredients:
- ½ cup organic chocolate chips (I prefer semi-sweet)
- 2 tbsp coconut butter
Mix the first 3 base ingredients well and then add 3 crumbled rice cakes. Mix well and spread into pan (greased with coconut butter or parchment or wax paper underneath) and place in freezer.
Next, melt the coconut butter with chocolate chips and stir well. Pour on top of your base mix and sprinkle lightly with sea salt.
Return to the freezer for about 30 minutes. Cut a small bar or two and ENJOY!!
