Quinoa Berry Bake


  • 2 large bananas
  • 1 cup quinoa
  • 2 tbsp chia seeds
  • 2 cups milk of choice
  • 2 tsp cinnamon
  • 2 tsp vanilla
  • 2 tbsp maple syrup (or xylitol or monk fruit)
  • 1 ½ cups fresh or frozen berries


Mash bananas in a large baking dish and add everything but the berries. Whisk to combine, then fold in berries. Bake for 60-ish minutes at 375 until the quinoa is fully cooked.

Feel free to add your favorite toppings like fresh fruit, coconut flakes, nuts, seeds, vegan yogurt and more!
