- 2 large bananas
- 1 cup quinoa
- 2 tbsp chia seeds
- 2 cups milk of choice
- 2 tsp cinnamon
- 2 tsp vanilla
- 2 tbsp maple syrup (or xylitol or monk fruit)
- 1 ½ cups fresh or frozen berries
Mash bananas in a large baking dish and add everything but the berries. Whisk to combine, then fold in berries. Bake for 60-ish minutes at 375 until the quinoa is fully cooked.
