Pumpkin (Chocolate) Bread


  • ¾ cup almond butter (or other natural nut butter)
  • ¾ cup canned pumpkin puree
  • 2 eggs
  • ½ cup maple syrup or honey
  • 1 tsp vanilla
  • ½ cup cocoa powder
  • ½ tsp baking soda
  • Pinch of salt
  • ½ cup chocolate chips


Preheat oven to 350 and prep an 8 X 8-inch baking dish.

In a large bowl, mix almond butter and pumpkin. Whisk in eggs, then maple syrup and vanilla. Add cocoa powder, baking soda, and salt. Stir until well mixed.  Add in chocolate chips.

Pour into the dish and bake for 23-28 minutes until a toothpick comes out clean. Allow it to cool before serving. For a topping melt chocolate chips and 1 tbsp of coconut oil and drizzle across the top.
