2-Minute Low Carb English “Muffin”


  • ¼ cup almond flour
  • 1 tbsp arrowroot flour (or coconut flour)
  • 1 egg (can substitute flax egg)
  • ¼ tsp salt
  • 1/8 tsp baking soda

Combine all ingredients and whisk until smooth. Add the mix to a prepped ramekin or large mug. Microwave for 2 minutes, slice and… consider popping it in the toaster once sliced and THEN add your favorite toppings!

These are gluten-free and can be vegan, too.  I like to top mine with organic nut butter and a blueberry reduction and it tastes like a PB&J! I’ve also kept it simple with a little honey and hemp seeds.  You have to try this!
