Ingredients:
- ¼ cup shredded chicken
- 2/3 tbsp halved cherry tomatoes (really any chopped tomato will do!)
- 1/3 cup shredded mozzarella
- 3-5 oz cream cheese (or however much you’d like to use!)
- Low-carb tortilla of choice
- 1-2 tsp melted butter or ghee to brush on top
Spread 1.5 oz cream cheese on a low-carb tortilla. Then add pesto, the shredded chicken, tomatoes, and add the mozzarella last. Roll it up as tight as you can, then brush it with melted butter/ghee and slice it into 1-2” pinwheels.
Air fry for 6-9 minutes at 400.
