Ingredients:
- 1 cup red cabbage (shredded)
- 1 cup white cabbage (shredded)
- 1 can non-GMA sweetcorn, 2 carrots cut into thin slivers (matchsticks or shredded)
- 1 small red onion, chopped
- 4 spring onions, chopped
- 2 tbsp dill, chopped
- ½ tsp ground black pepper
Dressing:
- 3 tbsp quality mayonnaise
- 1 heaping tsp whole grain mustard
(I’ve also used a Green Goddess dressing with mashed avocado or a Cilantro Lime.)
Optional: Add shredded chicken or edamame to boost protein content.
Slice and dice all of the above ingredients, mix the dressing, apply well & ENJOY!!!
