1 Minute Low Carb Muffin


  • 4 tbsp ground flax
  • 1 organic egg
  • ¼ tsp baking soda

Combine all ingredients and whisk until smooth. Add the mix to a prepped ramekin or large mug. Microwave for 60 seconds, slice and add your favorite toppings!

These are gluten-free.  I like to top mine with organic nut butter and a blueberry reduction or avocado and bacon!
