Ingredients:
- 1 butternut squash (washed, split in half & cut into ¼-1/3 inch thick (max) “fries” so it cooks evenly
- 4 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp oregano
- 1 tsp onion powder
- Pinch of salt
- 1-2 cups of shredded parmesan (or pecorino cheese)
Prep and cut your squash. Mix the oil & other ingredients and then toss the squash until the pieces are all well coated. Dip both sides of the cut squash into the cheese & place the prepared pieces on a prepared baking sheet.
Bake for 20 minutes at 450. At 20 minutes, flip the fries & top with a little bit more cheese. Bake another 3-ish minutes.
There are lots of ways to serve this, however, I like to serve it with this chili lime sauce:
Chili Lime Sauce
- 2 tbsp mayo (clean, please!)
- 3 tbsp sour cream
- ½ tsp smoked paprika
- ½ tsp onion powder
- ¼ tsp cayenne
- Pinch of sea salt
- Juice of half a lime
