Artichoke Dip


  • 1 can artichokes (in water) drained and diced
  • 1 shallot, finely diced
  • ¾ cup plain Greek yogurt
  • 2 cups frozen spinach chopped
  • ¾ cup mozzarella cheese
  • 3 tbsp grated parmesan
  • 2 cloves of garlic, minced (or ½ tsp garlic powder)
  • Salt & pepper to taste

In a medium-sized bowl, mix all the ingredients, but set aside half of the cheese to use as a topping later. Transfer the mix to an 8×8 (or similar-sized) oven-safe dish. Bake for about 25-ish minutes at 375. Add the remaining cheese to the top and broil for about 2 minutes.

If you want to beef up the protein, add some shredded chicken.

Serve with your favorite chips (I like Siete tortilla chips) and ENJOY!!!
