Carrot “Fries”

These are so easy to make and so good!

Cut 3-4 large carrots slicing them lengthwise and then about 2-3″ long.

In a mixing bowl, generously toss them with olive oil, and then add your spices. I like to use paprika or smoked paprika, a bit of onion powder, sometimes garlic powder, a little chili powder, salt & pepper, and maybe a little oregano or basil. You choose the amounts to use based on your taste! lay the sliced and coated carrots in a single layer on a prepped baking sheet and then add grated or shredded parmesan.

Bake for 20-ish minutes at 350.

While the carrots are baking, mix up this simple dip:

  • 1/3 cup plain Greek yogurt
  • 1 tbsp olive oil
  • 1/2-1 tbsp honey
  • I usually mirror the same spices as above (paprika, salt, pepper, basil)
