Little Burger Rollups


  • 4 slices of cheddar cheese
  • 1 TBSP chopped onion (I like purple!)
  • ½-1 TBSP chopped dill pickle
  • 4-8 oz cooked ground beef (preferably hormone and nitrite-free)

Preheat oven to 400.  Lay 4 slices of cheddar cheese on a prepped baking sheet. Go ahead and PILE ON the desired amount of chopped onions, pickles, and cooked ground beef (or ground turkey or chicken). Cook your “burgers” for about 10 minutes. Once cooled a bit, roll them up & enjoy them with a little (no sugar added) ketchup OR this easy-to-make dip below.

Sauce Ingredients:

  • ¾ cup mayo (clean) or plain organic Greek yogurt
  • 2 TBSP chopped dill pickles
  • 1 TBSP mustard
  • ½-1 TBSP white vinegar
  • 1 TBSP chopped onions
  • 1-2 tsp sweetener of choice (I use xylitol or honey)
  • ½ tsp smoked paprika (this is my kryptonite!)
