Ingredients:
- 3 TBSP oat flour (or coconut flour…btw, you can make your own oat flour using a coffee grinder and old fashiopned oats!)
- 2 TBSP chocolate protein powder of choice (I use several; my fave is Perfect Keto Collagen Protein but the protein count is lower, so I also use Truvani Chocolate Protein Powder or Kion’s Chocolate Whey Protein)
- 5 TBSP cocoa or cacao powder
- 1 TBSP sweetener of choice (unless your protein powder is sweet)
- ½ TSP baking powder
- ¼ cup milk of choice (this brand has several clean options)
- 2 TBSP chocolate chips (I either use no sugar Choc Zero Dark Chips or Enjoy Life’s Semi-Sweet Mini Chocolate Chips)
- Optional: sea salt flakes, dried berries, shredded coconut, chopped walnuts
This recipe uses no eggs, so if you use a milk alternative and a non-milk protein powder, it’s a dairy-free, gluten-free treat!
Prep your mug with a swipe of coconut butter, olive oil, or ghee to prevent sticking. Mix all the ingredients above except optional toppings. Save a few chocolate chips for the top. Microwave it 60-80 seconds but start checking on it every 10 seconds after 30 since microwaves tend to differ in power. It’s not as tasty burned…!
