Ingredients:
- 4 eggs
- 1 cup organic butter of choice (I’ve made this with cashew, peanut, almond, and tahini)
- your chosen amount & type of chocolate chips (I either use no sugar Choc Zero Dark Chips or Enjoy Life’s Semi-Sweet Mini Chocolate Chips)
Preheat oven to 350.
Start with the eggs and whip them until peaks form. Then add your nut butter of choice. Toss in some chocolate chips. Pour the mix into a lined bread pan. Sprinkle a few more chocolate chips across the top and bake for approximately 25-30 minutes.
Now, if you need a little more sweetness, you can add 1-1.4 tbsp of maple syrup or xylitol if you’re trying to keep it super low carb.
So easy and deliciously fluffy!
