Nugget Ingredients:
- 2 lbs. ground chicken (or turkey & look for no antibiotic & hormone free, if you can)
- 2 eggs
- 1/3 cup grated or shredded parmesan (grated is best, tho!)
- ½ cup shredded mozzarella
- ¾ tsp garlic powder
- ¾ tsp onion powder
- ¾ tsp paprika
- 2 tsp salt
Nugget Coating Ingredients:
- ½ cup grated parmesan
- 3 tbsp potato starch (or tapioca starch or corn starch)
- ½ tsp paprika
- ½ tsp dried parsley
Spicy Ketchup Ingredients:
- ¼ cup low-sugar or no sugar added ketchup
- ½ tsp Worcestershire sauce (I am a Primal Kitchen fan and use this one)
- 1 tsp sriracha sauce
Preheat the oven to 425. Line a large baking sheet with parchment paper.
In a shallow bowl, combine the coating ingredients with a whisk. Then, in a larger bowl, combine the nugget ingredients with your hands until mixed. Now, form small nugget-like shapes by making ovals and flattening them. I like to use a misto to lightly coat the nuggets with olive oil and lightly dip them with the coating mix.
Bake the nuggets for 15 minutes, flip them and bake for another 10 minutes. I love these little nuggets!
