Potato Pie


  • 4-5 small-ish potatoes
  • 1 cup mozzarella
  • 3 eggs
  • 2 tbsp cream cheese
  • 8-10 cheery tomatoes
  • Red onion
  • Spinach
  • 3-4 tbsp butter or ghee
  • 1/5 cup of milk of choice
  • ½ tsp garlic powder
  • Salt & pepper to taste
  • Olive oil

Brush potatoes with oil and bake for 40 minutes at 400. Once cooked and cooled slightly, crush the potatoes into a pie dish mashing them evenly around. Sprinkle with salt and pepper and drizzle a bit of olive oil. Put the dish into the oven and bake for another 30 minutes.

Remove from the oven and place the cheese, cherry tomatoes, onion, and spinach in the center of the dish.

In a separate bowl, mix the eggs, softened cream cheese, butter, spices and milk. Pour this mixture over the pie and bake for another 30 minutes.

Before serving, sprinkle a little Parmesan on top.

Now, if you’d like to make this a little higher in protein, add some cooked bacon bits, shredded chicken, sliced spicy chicken sausage or other protein. So many options to try!
