Ingredients:
- 1 container (16 oz.) cultured cottage cheese
- 2 eggs
- 1 scoop clean vanilla protein powder
- 4 tbsp powdered monk fruit (or allulose)
- 1 tsp vanilla extract
- Optional for toppings: blueberries, strawberries, chopped walnuts, or lemon zest
Preheat oven to 350.
Put your cottage cheese into a food processor and then add the remaining ingredients. Blend until the mix is smooth and well-processed.
Spray a few ramekins with olive/avocado/coconut oil and fill the ramekins about halfway or 2/3 full so there is room to expand while cooking.
Bake for about 35-40 minutes. If you used muffin tins or smaller ramekins, it may require less time.
Allow to cool completely before eating. I like to chill them overnight in the refrigerator for a more appealing texture.
My favorite way to enjoy it is with a warm berry reduction of berries and coconut oil heated up and poured over the top!
