Ingredients:
- 1 medium zucchini
- 2 eggs (see vegan options below)
- ¼ cup cocoa powder
- 1 cup almond flour
- 2 tbsp melted butter (or ghee or coconut butter)
- ½ tsp baking powder
- ¼ cup sugar-free chocolate chips (optional)
Preheat oven to 350. Blend sliced zucchini with all of the above ingredients except the chips. Pour the mix into a prepared baking dish. Top with chocolate chips or chopped nuts.
Bake 32-ish minutes…or until the toothpick comes out clean.

P.S. Here are some vegan options for egg substitution:
- ¼ cup applesauce
- ½-1 mashed banana
- 1 Tbsp ground flax seed plus 3 Tbsp water
- 3 Tbsp pureed fruit 1 Tbsp chia seeds + 1/3 cup water blended & set for 15 min
- 1 Tbsp of your favorite vegan protein powder plus 3 Tbsp water
- ¼ cup of silken tofu
