“Dip” Ingredients:
- 1 15 oz can of drained & rinsed organic black beans
- 1 15 oz can of drained & rinsed organic corn
- 1 15 oz can drained & rinsed organic black-eyed peas
- 3 Roma tomatoes or a handful of cherry tomatoes (halved)
- 1 jalapeno deseeded & diced into small pieces
- 1 red pepper deseeded & diced into small pieces
- 1/2 small red or purple onion, diced small
- 1/2 cup chopped cilantro
Dressing Ingredients:
- 1/2 cup olive or avocado oil
- juice of 1 lime
- 2 tbsp red wine vinegar
- 2 tbsp honey
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
Chop up and mix all the “dip” ingredients into a large bowl. In a smaller bowl, mix and whisk the dressing ingredients. Pour over the dip and toss until well covered.
Now enjoy it however you desire! my husband likes it with taco seasoned ground beef and I prefer to eat it with (no bad seed oils!) Siete Tortilla chips!!
