Ingredients:
- 2 cups organic cottage cheese
- 4 pasture-raised eggs
- 1 ¼ cup flour (gluten-free, I typically use almond, rice or coconut flours)
- 1 ¼ tbsp baking powder
- ¼ cup avocado oil
- 3 tbsp maple syrup
- 1 tsp vanilla extract
Combine all these ingredients in a large bowl. If you prefer, you can blend your cottage cheese before mixing all the ingredients, however, I dump them all together and blend away…! To cook, heat up a nonstick pan or use extra oil on medium heat & pour your mix. Cook each side until golden brown before flipping or removing from the heat (for me this is about 2 ½ minutes per side on a gas stove). Once you’ve cooked all of your mix into pancakes. Stack them and top them with more maple syrup, local honey or organic whipped cream. I like to add some chopped walnuts and a few berries to mine!
These are pretty easy to make and SO yummy!
