Bar Base Ingredients:
- 1 cup old-fashioned rolled oats
- 2 scoops protein powder (for this recipe, I like to use these clean options: a vegan option, or this, or this)
- 1/4 cup organic nut butter of choice (I’ve been enjoying this cashew butter lately) or a PB powder if you’re looking for lower calories)
- 2 tbsp maple syrup (or 3 tbsp of this fiber syrup for less sugar)
- 1-2 tbsp water
- Optional: 1-2 tbsp mini semi-sweet chocolate chips or cacao nibs
- Optional: chopped organic cashews, walnuts or peanuts
- Optional: hemp seeds or ground flax seeds
Topping Ingredients:
- 1/2 tsp coconut oil
- 3 tbsp of dark or semi-sweet chocolate of choice
- optional: a dash of maple syrup or allulose
Mix all the ingredients, but the water in a bowl. Add water in tiny amounts as needed to get the mix into a sticky dough texture. The water amount can vary depending on selected ingredients (like if you opt for a powdered butter vs a runny/oily nut butter, or a powdered sugar alternative like allulose vs. maple syrup).
Next, press the dough into an even layer in a prepped or parchment lined dish.
Heat up your topping – either on the stove in a pan or in the microwave. BE CAREFUL not to burn the chocolate. now, you can drizzle a lovely design across the top and pop the bars into the fridge or freezer until the chocolate hardens, then remove and cut the mix into bars. I store mine in the freezer and they can last a while…although somehow I haven’t been able to test any longer than a month…!!
