Ingredients:
- 4 oz red cabbage, thinly sliced
- 4 oz green cabbage, thinly sliced
- ½ red onion, thinly sliced
- 2 oz carrots, shredded or thinly sliced
- 2 bunches of scallions, chopped
Dressing:
- 6 oz almond or peanut butter
- 3 oz water
- 2 oz honey
- 2 oz rice vinegar
- 2 oz lime juice
- 1 oz ginger, minced
- 1 oz garlic, minced
- 1 oz fish sauce (optional)
Prepare the Slaw: Combine shredded red and green cabbage, red onion, carrots, and scallions in a bowl. Toss to mix.
Make the Dressing: Whisk together almond or peanut butter, honey, ginger, garlic, rice vinegar, lime juice, fish sauce, and water in a separate bowl until smooth.
Combine & Toss: Pour the dressing over the slaw and toss until everything is evenly coated.
Serve & Enjoy: Serve immediately, or refrigerate for 30 minutes for enhanced flavor.
Note: If you’re looking to increase protein intake, this is a great salad to add cooked shredded chicken to. Also, this salad keeps well a few days in the fridge so make extra to food prep a few days!
