High Protein Chicken “Enchilada”

Ingredients:

  • 1 cup of more cooked & cut or shredded chicken
  • 1 cup organic cottage cheese
  • 1/2-2/3 cup enchilada sauce
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup diced green chilies (optional)
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • salt & pepper to taste
  • fresh cilantro as garnish (optional)

 

Combine all the ingredients in a microwave safe dish and mix well. Heat the mixture in a microwave for 1-3 minutes (or in the oven at 350 for 15-20 minutes), or until the mixture is well heated and the cheese is melted.  Garnish with cilantro and organic corn chips. Right now I am enjoying super crunchy MASA tortilla chips cooked with beef tallow.
