This one is so easy to make and YUMMY! I’ve made several versions and love to keep some frozen bark on hand when you just want a little something sweet!
Ingredients:
- 1 cup Vanilla Greek Yogurt (Be sure to read the label for sugar added!)
- 1/4 cup organic nut butter of choice (Why organic? Nuts are one of the most heavily pesticide-sprayed crops)
- 1-2 scoops vanilla protein (If I use a coconut yogurt, I’ll increase protein powder to boost protein lost by not using Greek yogurt…but if you are dairy-free, this is an option)
- 1 tbsp maple syrup or 2 tbsp fiber syrup (if trying to keep calories low)
- 1/4 cup dark chocolate chips, melted (I also like to mix in some whole chocolate chips) – I often use these semi-sweet non-dairy chips of these chips for sugar free)
- 1/8-1/4 cup chopped or crushed organic almonds, pistachios, or salted peanuts for topping
Mix the ingredients. Spread onto waxed paper or parchment. Add some swirls of melted chocolate and nuts to the top. Freeze a couple hours, then break it up, enjoy & store what you don’t eat!!
