Friends, this is a fun and high-protein dish you’re going to LOVE!
I’ve made these several ways. My two faves right now are ALFREDO (alfredo sauce made dairy-free, if you like, plus cooked spinach and shaved parmesan…sometimes we add some cooked bacon, as well) and Pesto “pockets”.
The base for both of these starts with a pound of ground hormone-free chicken. IN a bowl, I add onion powder, garlic powder, plus some salt and pepper. As little or as much as you like! using your hands, mix the seasonings with the chicken. You can add some oregano if you’d like. Once well-mixed, flatten the seasoned chicken about 1/1-1″ thick and shape it into a circle. On one half, add your desired filling. For the pesto pocket, I spread a layer of pesto, spinach, and then added sun-dried organic tomatoes & some mozzarella. If you are dairy-free, just replace the cheese with a fairy free version. Fold the other half of the chicken over and press the edges together to “seal” the pocket. Sprinkle more parmesan on top and air fry at 390-400 for 18-24 minutes. About 5 minutes before it’s done, start checking the air fryer to ensure you don’t overcook or burn it.
For the Alfredo “pocket”, after you’ve mixed your alfredo sauce (here’s a high protein option!) and the sauce is heating up, season your chicken. Thaw spinach, if needed, or use fresh! press your chicken pocket mix into desired thickness and add the alfredo mix with spinach, bacon & parmesan. You can add mushrooms or other items. Sprinkle parmesan on the top and cook int he air fryer 18-24 minutes!
That’s it…super easy to make and super satisfying.
