Be still my heart….if you have a food processor, you’re going to want to try this one! here’s what you’ll need:
Ingredients:
- 1.5 cups walnuts (organic, if possible)
- 1 cup cashews (organic, if possible)
- 10-12-ish pitted medjool dates
- 4 Tbsp melted coconut butter
- 3 Tbsp Maple Syrup (pure, if possible)
- 1 tsp vanilla extract
- 3:1 or 2:1 ratio of semi-dark, dark, or sugar free dark chocolate chips melted with a little coconut butter
Process the walnuts in a food processor and then add the dates to the mix. Scrape the mixture and press it into a lined or prepped dish.
Next combine the cashews, maple syrup, coconut butter & vanilla extract in the food processor. Add this mix as a layer to your dish & stick it in the freezer.
Melt the coconut butter and chocolate and then pour it on top of your mixture.
Put back in the freezer 30 minutes.
Slice your bars & enjoy. You can even dip them in more chocolate and roll them in chopped nuts if you’d like or coconut flakes.
