Ingredients:
- 1 cup cultured cottage cheese
- 1 cup almond flour (or coconut or other gluten-free baking flour)
- 1-2 scoops chocolate protein powder
- 2 tbsp organic nut butter of choice (nuts are heavily sprayed, so go organic)
- 3-4 tsp sweetener of choice (I use allulose)
- Optional: 1 tbsp cocoa powder (depending on the desired level of chocolate)
Simply blend everything but the nut butter. Scoop and shape the mix into cookies on some parchment paper. Drizzle the nut butter across the top of the cookies.
Bake at 350 for approximately 15 minutes.

(If you don’t have chocolate protein powder on hand, I’ve made this with just the cocoa powder but more like 2-3 tbsp of it and it tasted just fine!)
