Ingredients
- 3 cups old-fashioned oats
- 1/4 tsp. salt
- 2 Tbsp. chia seeds
- 1 tsp. cinnamon
- 1/2 cup organic nut butter (lately I’ve been enjoying this one, but Costco has a tasty organic PB, too!)
- 1/3 cup honey
- 1/4 cup melted coconut oil
- 1 tsp. vanilla
Get started by preheating your oven to 325°F (160°C). Line a baking sheet with parchment paper.
In a large bowl, combine the oats, salt, chia seeds, and cinnamon. Add the peanut butter, honey, coconut oil, and vanilla extract, stirring until everything is well mixed.
Press the granola mixture evenly onto the prepared baking sheet and bake for 18 – 22 minutes, or until lightly golden brown.
Let the granola cool completely on the sheet before breaking it into desired chunks.
Feel free to mix in your favorite additions like chocolate bits, dried fruit, or nuts after it has cooled…and ENJOY!!!
