* 4 tbsp tamari soy sauce
* 1 tsp fresh ginger, grated

* 1 tsp sriracha (optional)

Noodle Salad Ingredients:
* 2 packets Miracle Noodles
* ⅓ cup shredded carrot
* ⅓ cup sliced cabbage
* ⅓ red bell pepper, chopped
* ¼ cup cilantro
* 2-3 green onions
* Cooked shrimp (optional, for topping)
Directions:
1. Prepare the Peanut Dressing: In a small bowl, add all the dressing ingredients. Use a zester to grate the fresh ginger and garlic. Whisk everything together until well combined, then set aside.
2. Prepare the Miracle Noodles: Open the Miracle Noodle packets, then use a strainer to drain and rinse them thoroughly. Shake off any excess water.
3. Dry the Noodles: Place the drained noodles in a dry pan over medium heat. Stir consistently for a few minutes to remove moisture; no oil is needed. If you prefer shorter noodles, use tongs to lift them and cut with scissors for easier serving. Remove from heat after a few minutes and set aside to cool while you prep your vegetables and cook the shrimp (if using).
4. Assemble the Salad: Once the noodles are semi-cooled, add them to a bowl along with the chopped vegetables. Pour in the peanut sauce and toss well to combine all the ingredients.
5. To serve, top the salad with cooked chicken or shrimp (if desired), then garnish with chopped peanuts, freshly chopped cilantro, and an extra squeeze of lime.
