Ingredients:
- 2 whole eggs and 3-4 oz of egg whites, OR
- 6 whole eggs
- 2 tsp of powdered peanut butter (I use organic PB Fit)
- 1/3-1/2 cup milk of choice
- 1 scoop vanilla protein powder (optional, I like to use Equip)
- vanilla extract
- 4 slices of bread (I like to use a sour dough or Carbonaut White Bread)
- cinnamon sugar
- sugar-free sweetener of choice (optional)
- sugar-free maple syrup (optional)
Directions:
- Preheat oven to 375 or 400.
- Mix eggs, egg whites (if using), milk, PB Fit & vanilla extract well. Pour into prepared baking dish. Add a little sugar free sweetener, if desired.
- Tear your bread into little pieces and press & saturate into the egg mixture.
- Sprinkle with cinnamon and sugar free sugar (or powdered sugar).
- Bake for 25-30-ish minutes depending on temperature.
- Once cooled, top with blueberries (or other fruit), a little maple syrup or a bit of whipped cream and ENJOY!
