High Protein “French Toast”

Ingredients:

  • 2 whole eggs and 3-4 oz of egg whites, OR
  • 6 whole eggs
  • 2 tsp of powdered peanut butter (I use organic PB Fit)
  • 1/3-1/2 cup milk of choice
  • 1 scoop vanilla protein powder (optional, I like to use Equip)
  • vanilla extract
  • 4 slices of bread (I like to use a sour dough or Carbonaut White Bread)
  • cinnamon sugar
  • sugar-free sweetener of choice (optional)
  • sugar-free maple syrup (optional)

Directions:

  1. Preheat oven to 375 or 400.
  2. Mix eggs, egg whites (if using), milk, PB Fit & vanilla extract well. Pour into prepared baking dish. Add a little sugar free sweetener, if desired.
  3. Tear your bread into little pieces and press & saturate into the egg mixture.
  4. Sprinkle with cinnamon and sugar free sugar (or powdered sugar).
  5. Bake for 25-30-ish minutes depending on temperature.
  6. Once cooled, top with blueberries (or other fruit), a little maple syrup or a bit of whipped cream and ENJOY!
