Choc-Oat Power Bake

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a large bowl, whisk together the oats, cocoa powder, baking powder, and salt.
  3. In a separate, medium-sized bowl, whisk together the eggs, almond milk, maple syrup, coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the bowl with the dry ingredients and stir until just combined.
  5. Fold in the chocolate chips, then pour the batter into the prepared baking pan. Sprinkle extra chocolate chips over the top.
  6. Bake for 45-50 minutes, or until the center looks set.
  7. Let the dish cool in the pan for at least 10 minutes before slicing and serving.
  8. Add any optional toppings you like and enjoy!
