Ingredients:
- 2 cups rolled oats
- 1/3 cup cocoa powder
- 1 tsp baking powder
- Optional Protein Boost: 1-2 scoops of Chocolate Protein Powder
- 1/4 tsp salt
- 2 eggs
- 1/3 cup organic or sugar-free maple syrup
- 1/4 cup coconut oil
- 1 1/2 cup almond milk
- 1 tsp vanilla
- 1 cup semi-sweet chocolate chips (leave some for sprinkling on top before baking)
- Optional topping ideas: peanut butter, whipped cream, organic walnuts.
Directions:
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
- In a large bowl, whisk together the oats, cocoa powder, baking powder, and salt.
- In a separate, medium-sized bowl, whisk together the eggs, almond milk, maple syrup, coconut oil, and vanilla extract.
- Pour the wet ingredients into the bowl with the dry ingredients and stir until just combined.
- Fold in the chocolate chips, then pour the batter into the prepared baking pan. Sprinkle extra chocolate chips over the top.
- Bake for 45-50 minutes, or until the center looks set.
- Let the dish cool in the pan for at least 10 minutes before slicing and serving.
- Add any optional toppings you like and enjoy!
