Sunset Chicken & Sweet Potato Pan Meal

This recipe is designed for a single sheet pan, making both cooking and cleanup simple.

Ingredients:

  • 2-3 chicken breasts
  • 2-3 small sweet potatoes (or 1-2 large ones!)
  • Optional: 1 cup chopped broccoli or zucchini
  • 1/2 purple onion
  • 1 jalapeño (if you like it hot!)
  • Feta cheese (you choose how much!)
  • Garlic powder (up to you!)
  • Paprika
  • Chili or cayenne powder
  • Salt & pepper
  • Olive oil
  • Honey or hot honey
  • Avocado (for serving)

Directions:

  1. Preheat the oven to 425°F (220°C).
  2. Chop the chicken, sweet potato, and onion into bite-sized pieces and place them on a large sheet pan.
  3. Drizzle with olive oil and season with garlic powder, paprika, chili or cayenne powder, and salt and pepper.
  4. Toss all the ingredients together on the pan to coat them evenly.
  5. Bake for 20 minutes, then toss the ingredients halfway through to ensure even cooking.
  6. Add the chopped jalapeño, crumbled feta, and a drizzle of honey to the pan.
  7. Broil for a few minutes to get a nice char on the ingredients.
  8. Serve immediately and add fresh avocado on top.

This is an easy recipe to use as meal prep, as well. Just double the recipe, eat some once cooked and separate the rest into separate glass containers for the rest of the week!
